Easy Gluten-Free Paleo Granola

WHAT YOU’LL NEED:
Dry ingredients:
- 2 cups slivered almonds
- 2 cups unsweetened coconut flakes
- 1 cup raw pumpkin seeds
- 1 cup dried cranberries
- 1/2 cup raw sunflower seeds
- 2 tbsp chia seeds
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1/2 tsp cinnamon
- Wet ingredients:
- 2 tbsp coconut oil
- 1/3 cup honey
- 1 tsp vanilla extract
Other:
- Mixing bowl
- Bake sheet
- Parchment paper
- 300 degree oven
INSTRUCTIONS:
- In a mixing bowl combine all dry ingredients.
- In a small saucepan, melt the coconut oil. Remove and let cool slightly. Then add honey and vanilla.
- Pour wet ingredients into dry ingredients. Mix thoroughly.
- Place parchment paper on bake sheet.
- Spread mixture evenly onto parchment-lined bake sheet.
- Bake in 300-degree oven for 30 minutes or until golden brown (note: stir after 15 minutes).
- Remove from oven and let cool.
- Serve in a bowl with milk!
