Five Delightful Eclipse Party Recipes
The 2017 solar eclipse is upon us! People everywhere are gathering to witness this rare event, especially within a certain swath of the United States, where the eclipse will be most prominent.
What better way to celebrate the occasion than to host a party with food and drinks? If you do, you MUST try these five easy and fun recipes! Each has a solar eclipse theme. Includes three appetizers and two drinks that you can make at home with easy-to-find ingredients and very little effort. Perfect for your social gathering to celebrate the event!

RECIPES:
1. Solar Eclipse Salmon Sandwiches
What you’ll need:
- White bread
- Dark bread
- Small round cookie cutter
- Medium sun-shaped cutter
- 4 oz. canned salmon
- 4 oz. cream cheese
- 2 Tbsp lemon juice
- 2 Tbsp half & half
- 3/4 tsp dill
- Salt & pepper to taste
- Using a large sun-shaped cookie cutter, cut out white bread pieces and set aside.
- Using a medium circle-shaped cookie cutter, cut out dark bread pieces and set aside.
- Combine all other ingredients in a food processor and blend until creamy.
- Combine one white bread piece, salmon spread and one dark bread piece.
- Serve!
2. Solar Eclipse Cheese Platter
What you’ll need:
- Cheddar cheese
- Jack cheese
- Black olives
- Place black olives in the center of a plate (preferably in a small glass or dish).
- Cut cheese slice squares diagonally into triangles. Arrange them around the plate in a fan-like appearance. Cheddar cheese goes on the bottom layer, then jack cheese on top.
- Serve!
3. Solar Eclipse Fruit Platter
What you’ll need:
- Pineapple spears
- Dark grapes
- Place black olives in the center of a plate (preferably in a small glass or dish).
- Cut cheese slice squares diagonally into triangles. Arrange them around the plate in a fan-like appearance. Cheddar cheese goes on the bottom layer, then jack cheese on top.
- Serve!
4. Solar Eclipse Rum Cocktail
What you’ll need:
- 2 oz. Dark rum
- 6 oz. Orange soda
- Ice
- Place a few ice cubes in a short glass.
- Pour 6 ounces of orange soda into the glass.
- Pour 2 ounces of dark rum (pour slowly so that the run sits on top).
- Serve!
5. Solar Eclipse Drink (non-alcoholic)
What you’ll need:
- Black tea
- Lemonade
- Circular-shaped ice cube tray or silicone mold
- Steep about 3 bags of black tea in a 1/2 liter carafe or pitcher.
- Remove tea bags and let the tea cool.
- Pour tea into circular-shaped ice cube tray or silicone mold.
- Freeze overnight.
- Pour 6 ounces of lemonade into a glass.
- Add one frozen black tea cube.
- Serve!
