Try this super easy gluten-free Irish soda bread recipe! It’s hearty, healthy and delicious. Below are the simple directions.

WHAT YOU’LL NEED:

  • 4 tsp water
  • 1 1/4 tsp chia seeds
  • 2 cups almond or coconut milk
  • 2 tbsp apple cider vinegar
  • 4 cups gluten-free flour
  • 1/2 cup almond flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp caraway seeds


DIRECTIONS:

  1. Preheat oven to 425
  2. Mix the water and chia seed together and set aside until thickened (about 10 minutes). 
  3. Combine vinegar and almond milk and let sit to sour (about 10 minutes).
  4. Meanwhile, combine the dry ingredients (gluten-free flour, almond flour, salt, baking soda and caraway seeds.)  
  5. Once the chia seed water mixture has thickened into a gel, add to the dry ingredients along with the vinegar/almond milk mixture.
  6. Mix until combined into a dough. Add gluten-free flour to thicken, if necessary — in the video, we started with 3 cups of flour then added 1 cup of flour (4 cups total).
  7. Form the dough into a bread shaped mound and place onto a parchment-lined bake pan. Cut an “X” on the top.
  8. Bake at 425 (F) degrees for about 40 minutes or until lightly browned.
  9. Let cool 10 minutes before serving.
