Here’s how to make a lucky Irish breakfast. It’s super easy and will bring a smile to anyone’s face. Perfect for your Irish loved ones or St. Patrick’s Day! Plus it’s fun, healthy and delicious. Below are the simple directions.

WHAT YOU’LL NEED:
- 1 Green bell pepper
- 2 Eggs
- Butter
- Irish breakfast tea
- Irish soda bread (see separate recipe)
DIRECTIONS:
(Note: makes one serving)
- Find a green bell pepper that would make a four leaf “clover” shape. Slice it into 1/2 inch thick pieces. You only need two slices. Cut two “stems” from the other slices.
- Separate two eggs yolks from their whites. Set aside.
- In a small fry pan, over medium-low heat, place a slice of butter and melt in pan (spread around the cooking surface).
- Set the bell pepper “clover leaves” and “stems” into the pan.
- Pour partial egg whites into the center of the bell pepper “clover leaf” shapes. Be sure not to fill them up to the top or they will spill over the edge.
- Carefully place the egg yolks into the bell pepper “clover leaf” shapes.
- Cook for about 8 minutes. (You can cover the pan with a lid for faster cooking.)
- When egg whites have been fully cooked, remove from pan.
- Trim off any egg white spillage from the outside edge of the bell pepper “clover leaf” with a sharp knife.
- Serve with Irish Soda bread (see recipe) and a cup of hot Irish Breakfast tea.
